Protein Pancakes

Looking for a quick, delicious, and protein-packed breakfast? These pancakes are simple to make, full of flavor, and perfect for a healthy lifestyle!

Ingredients:

  • ½ cup egg whites

  • ½–1 scoop vanilla protein powder

  • 40 grams instant oats

  • 1 teaspoon vanilla extract

  • A few dashes of cinnamon

  • A few dashes of pumpkin spice

  • (Optional) A pinch of baking powder for extra fluffiness

  • (Optional) Lily’s chocolate chips for a sweet touch

Instructions:

  1. Add the egg whites, protein powder, oats, vanilla extract, cinnamon, and pumpkin spice to a blender (a high-speed blender like a Ninja works great).

  2. Blend for about 20 seconds until smooth.

  3. Heat a non-stick skillet over medium heat.

  4. Pour the batter onto the skillet, creating two medium-sized pancakes.

  5. Cook each pancake for about 2–3 minutes per side, or until bubbles form on the surface and the edges look set.

  6. (Optional) Before flipping, sprinkle a few Lily’s chocolate chips into the batter for a delicious chocolate chip version!

To Serve:

Once the pancakes are cooked, spread 1 tablespoon of peanut butter between the two pancakes and drizzle a little sugar-free syrup on top. Enjoy!

Tip: If you like fluffier pancakes, feel free to add a pinch of baking powder to the batter — but they’re just as tasty without it!
